Ingredients:

  • 2 cups (180g) Old Fashioned Rolled Oats
  • 1/2 cup (65g) Ground Flaxseed Meal
  • 2 tbsp (20g) Chia Seeds
  • 1 cup (250g) Creamy Natural Peanut Butter
  • 1/2 cup (170g) Raw Honey
  • 1 tsp (5ml) Pure Vanilla Extract
  • 1/2 cup (90g) Mini Dark Chocolate Chips
  • 1/4 tsp (1.5g) Fine Sea Salt

Instructions:

  1. In a large mixing bowl, whisk together the oats, flaxseed meal, chia seeds, and sea salt. Create a well in the center and pour in the peanut butter, honey, and vanilla extract. Stir vigorously with a stiff spatula until no dry pockets remain and the mixture is tacky.
  2. Cover the bowl and place it in the refrigerator for 30 minutes. This hydration phase allows the oats to soften and the fats in the peanut butter to stabilize, preventing the bites from crumbling.
  3. Use a 1-tablespoon cookie scoop to portion the dough. Roll each portion between your palms with firm pressure to form a smooth sphere. If the dough is too sticky, lightly dampen your hands with water.
