  • 0.5 cup (170g) raw honey
  • 1 tsp (5ml) pure vanilla extract
  • 0.5 tsp (3g) fine sea salt
  • 2 cups (180g) old fashioned rolled oats
  • 0.5 cup (60g) oat flour
  • 0.25 cup (30g) ground flaxseeds
  • 0.33 cup (50g) roasted salted peanuts, chopped
  • 0.25 cup (45g) mini dark chocolate chips (70% cacao)

Instructions:

  1. In a large mixing bowl, combine the peanut butter, honey, vanilla extract, and sea salt. Whisk vigorously until the mixture is completely emulsified and appears glossy, like liquid caramel. If the peanut butter is too stiff, microwave for 20 seconds before whisking.
  2. Add the rolled oats, oat flour, and ground flaxseeds to the bowl. Use a sturdy silicone spatula to 'smear and fold' the ingredients until every oat flake is thoroughly coated and a thick, tacky dough forms.
  3. Fold in the chopped peanuts and dark chocolate chips last to ensure they remain distinct and do not melt into the base.
  4. Line an 8x8 inch pan with parchment paper. Transfer the mixture to the pan and press down firmly. Use a heavy-bottomed glass or a second pan to compress the mixture into a dense, even layer.
  5. Refrigerate for 30 minutes to allow the fats to set and the fibers to hydrate before slicing into 12 bars.
