Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 0.5 cup (115g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 0.25 tsp (1.5g) salt
- 8 oz (225g) full-fat cream cheese, softened
- 0.5 cup (100g) powdered sugar
- 1 cup (245g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 1.5 tsp (6g) pumpkin pie spice
- 1 cup (240ml) heavy whipping cream, chilled
Instructions:
- Line an 8x8 inch pan with parchment paper, leaving an overhang on the sides.
- Stir together graham cracker crumbs, melted butter, sugar, and salt until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the pan and freeze for 10 minutes to set.
- Beat softened cream cheese and powdered sugar until smooth and fluffy.
- Stir in pumpkin puree, vanilla extract, and pumpkin pie spice until the color is uniform.
- In a separate chilled bowl, whip heavy cream on high speed until stiff peaks form.
- Gently fold the whipped cream into the pumpkin mixture using a spatula.
- Spread the filling evenly over the chilled crust and refrigerate for at least 6 hours before slicing.
