Ingredients:
- 1.5 cups (180g) gingersnap cookie crumbs
- 5 tbsp (70g) unsalted butter, melted
- 1 tbsp (8g) granulated sugar
- 16 oz (450g) full-fat cream cheese, softened
- 1 cup (120g) powdered sugar, sifted
- 0.5 cup (125g) pumpkin purée, strained
- 1 tsp (5ml) vanilla extract
- 1.5 tsp (4g) pumpkin pie spice
- 1 cup (240ml) heavy whipping cream, chilled
Instructions:
- Combine the gingersnap crumbs, melted butter, and sugar in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan using the base of a measuring cup to ensure a compact base.
- Place the pan in the freezer for 10 minutes to flash-set the crust.
- In a large bowl, beat the softened cream cheese and powdered sugar until the mixture is pale and completely smooth (about 3 minutes).
- Fold in the strained pumpkin purée, vanilla extract, and pumpkin pie spice, mixing on medium speed until the color is uniform.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pumpkin mixture using a spatula, ensuring you do not overmix.
- Pour the filling over the chilled crust and smooth the top with a spatula.
- Refrigerate the cheesecake for a minimum of 6 hours to set completely.
