Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp (6g) baking soda
- 1/2 tsp (3g) baking powder
- 1/2 tsp (3g) kosher salt
- 2 tsp (4g) pumpkin pie spice
- 15 oz (425g) pumpkin puree
- 1/2 cup (110g) vegetable oil
- 2 large eggs
- 2 tbsp (12g) fresh orange zest
- 1/4 cup (60ml) fresh-squeezed orange juice
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, kosher salt, and pumpkin pie spice until no clumps remain.
- In a large bowl, combine the pumpkin puree, vegetable oil, eggs, orange zest, orange juice, and vanilla extract. Whisk vigorously until the mixture is smooth and the oil is fully incorporated.
- Pour the dry ingredients into the wet mixture. Using a spatula, gently fold the flour in until just combined; do not overmix.
- Pour the batter into the prepared pan. Bake for 60–70 minutes, or until the top is deep mahogany brown and a toothpick inserted into the center comes out clean.
