Ingredients:
- 3 medium ripe bananas, sliced into 1/4-inch rounds
- 1/3 cup (80g) natural creamy peanut butter
- 1 cup (170g) dark chocolate chips (60% cacao)
- 1 tablespoon (15ml) refined coconut oil
- 1 teaspoon flaky sea salt
- 2 tablespoons crushed roasted peanuts
Instructions:
- Peel the bananas and slice them into uniform 1/4-inch thick rounds. Line a baking sheet with parchment paper.
- Place about 1/2 teaspoon of peanut butter onto half of the banana slices and top with the remaining slices to create mini sandwiches.
- Place the tray in the freezer for at least 60 minutes to flash freeze the sandwiches until solid.
- In a microwave-safe glass bowl, combine dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring until glossy and smooth.
- Using a fork, submerge each frozen sandwich into the chocolate. Tap off excess and return to the parchment paper.
- Immediately sprinkle with flaky sea salt or crushed peanuts and freeze for an additional 30–60 minutes until firm.
