Ingredients:

  • 3 medium ripe bananas, sliced into 1/4-inch rounds
  • 1/3 cup (80g) natural creamy peanut butter
  • 1 cup (170g) dark chocolate chips (60% cacao)
  • 1 tablespoon (15ml) refined coconut oil
  • 1 teaspoon flaky sea salt
  • 2 tablespoons crushed roasted peanuts

Instructions:

  1. Peel the bananas and slice them into uniform 1/4-inch thick rounds. Line a baking sheet with parchment paper.
  2. Place about 1/2 teaspoon of peanut butter onto half of the banana slices and top with the remaining slices to create mini sandwiches.
  3. Place the tray in the freezer for at least 60 minutes to flash freeze the sandwiches until solid.
  4. In a microwave-safe glass bowl, combine dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring until glossy and smooth.
  5. Using a fork, submerge each frozen sandwich into the chocolate. Tap off excess and return to the parchment paper.
  6. Immediately sprinkle with flaky sea salt or crushed peanuts and freeze for an additional 30–60 minutes until firm.
