Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (110g) neutral oil
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/4 cup (60g) sour cream
- 1 1/2 cups (170g) grated zucchini, squeezed dry
- 1 cup (220g) crushed pineapple, drained
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) pineapple juice
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
- Grate the zucchini and squeeze firmly using a clean kitchen towel or fine-mesh strainer to remove excess water.
- Strain the crushed pineapple to ensure it is well-drained before measuring.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, whisk oil and sugar. Add eggs one at a time, then stir in vanilla and sour cream until smooth.
- Gently fold the squeezed zucchini and drained pineapple into the wet mixture using a spatula.
- Gradually stir in the dry ingredients until flour streaks disappear, being careful not to over-mix.
- Pour batter into the pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk powdered sugar and pineapple juice together, then drizzle over the cooled bread.
