Ingredients:
- 1 2/3 cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 15 oz (425g) canned pumpkin pie filling
- 2 large (110g) eggs
- 1/3 cup (80ml) melted coconut oil
- 1/2 cup (100g) coconut sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your loaf pan thoroughly or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt until no clumps remain.
- In a large bowl, beat the eggs and coconut sugar until slightly pale. Stir in the pumpkin pie filling, melted oil, and vanilla extract until the mixture is a uniform, deep orange hue.
- Gently fold the dry ingredients into the wet mixture using a spatula. Mix only until just combined.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 55–65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
