Ingredients:
- 1 large (10-inch) flour tortilla (70g)
- 2 large eggs (100g)
- 1 tbsp unsalted butter (14g)
- 1/4 tsp kosher salt
- 1/8 tsp cracked black pepper
- 2 tbsp pre-cooked ham (30g)
- 1/3 cup shredded sharp cheddar cheese (40g)
- 1 tbsp fresh chives (5g)
Instructions:
- In a small mixing bowl, whisk the eggs with salt and pepper until no streaks of white remain.
- Heat half of the butter (7g) in a 10-inch non-stick skillet over medium heat. Pour in the eggs and the pre-cooked ham. Use a silicone spatula to scramble gently for about 60 seconds until 80% set. Remove eggs from the pan while still slightly wet.
- Wipe the skillet clean and melt the remaining 7g of butter. Lay the flour tortilla flat in the skillet.
- Sprinkle half of the shredded cheese over the entire tortilla. Pile the scrambled egg mixture onto one half of the tortilla, then top with the remaining cheese and fresh chives.
- Fold the empty half of the tortilla over the filling. Press down firmly with a spatula and cook for 2 minutes per side over medium-low heat until the crust is deep golden-brown and crispy.
