Ingredients:

  • 1 large (10-inch) flour tortilla (70g)
  • 2 large eggs (100g)
  • 1 tbsp unsalted butter (14g)
  • 1/4 tsp kosher salt
  • 1/8 tsp cracked black pepper
  • 2 tbsp pre-cooked ham (30g)
  • 1/3 cup shredded sharp cheddar cheese (40g)
  • 1 tbsp fresh chives (5g)

Instructions:

  1. In a small mixing bowl, whisk the eggs with salt and pepper until no streaks of white remain.
  2. Heat half of the butter (7g) in a 10-inch non-stick skillet over medium heat. Pour in the eggs and the pre-cooked ham. Use a silicone spatula to scramble gently for about 60 seconds until 80% set. Remove eggs from the pan while still slightly wet.
  3. Wipe the skillet clean and melt the remaining 7g of butter. Lay the flour tortilla flat in the skillet.
  4. Sprinkle half of the shredded cheese over the entire tortilla. Pile the scrambled egg mixture onto one half of the tortilla, then top with the remaining cheese and fresh chives.
  5. Fold the empty half of the tortilla over the filling. Press down firmly with a spatula and cook for 2 minutes per side over medium-low heat until the crust is deep golden-brown and crispy.
