Ingredients:

  • 2 cups (300g) fresh strawberries, hulled and quartered
  • 1 cup (125g) fresh raspberries
  • 1 tbsp (15ml) fresh lemon juice
  • 1 cup (245g) plain non-fat Greek yogurt
  • 2 tbsp (42g) honey
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (60g) mini marshmallows
  • 2 cups (300g) fresh blueberries

Instructions:

  1. Wash and thoroughly dry all berries. Combine the quartered strawberries and raspberries in a bowl and drizzle with lemon juice. Toss gently with a silicone spatula to avoid crushing the raspberries.
  2. In a separate bowl, whisk together the Greek yogurt, honey, and vanilla extract until the mixture is velvety and smooth. Gently fold in the mini marshmallows.
  3. Spoon half of the red berry mixture into the bottom of a clear glass trifle bowl or individual mason jars.
  4. Spread the creamy yogurt mixture evenly over the berries, smoothing the top with a spoon.
  5. Layer the blueberries on top, finishing with the remaining red berries for a vibrant contrast.
