Ingredients:
- 2 cups (300g) fresh strawberries, hulled and quartered
- 1 cup (125g) fresh raspberries
- 1 tbsp (15ml) fresh lemon juice
- 1 cup (245g) plain non-fat Greek yogurt
- 2 tbsp (42g) honey
- 1 tsp (5ml) vanilla extract
- 1/2 cup (60g) mini marshmallows
- 2 cups (300g) fresh blueberries
Instructions:
- Wash and thoroughly dry all berries. Combine the quartered strawberries and raspberries in a bowl and drizzle with lemon juice. Toss gently with a silicone spatula to avoid crushing the raspberries.
- In a separate bowl, whisk together the Greek yogurt, honey, and vanilla extract until the mixture is velvety and smooth. Gently fold in the mini marshmallows.
- Spoon half of the red berry mixture into the bottom of a clear glass trifle bowl or individual mason jars.
- Spread the creamy yogurt mixture evenly over the berries, smoothing the top with a spoon.
- Layer the blueberries on top, finishing with the remaining red berries for a vibrant contrast.
