Ingredients:

  • 1 lb fresh strawberries, hulled and quartered
  • 1 tbsp fresh lime juice
  • 1 cup mini marshmallows
  • 1/4 cup Greek yogurt
  • 1 pint fresh blueberries, rinsed and dried
  • 2 tbsp honey
  • 1 tsp lemon zest

Instructions:

  1. Rinse the strawberries and blueberries under cold water. Use paper towels to pat them completely dry. Note: Wet fruit makes the glaze slide right off.
  2. Hull the strawberries by removing the green tops and slicing them into uniform quarters. until they are roughly the same size as a marshmallow.
  3. Take one bamboo skewer and slide on one strawberry piece.
  4. Add one mini marshmallow.
  5. Slide on two blueberries. Note: Two blueberries provide a stronger block of color.
  6. Repeat the strawberry marshmallow-blueberry pattern until the skewer is full. until about 2 inches of the stick remains.
  7. In a small bowl, whisk together the honey, lime juice, and lemon zest.
  8. Lightly drizzle the glaze over the fruit using a pastry brush or spoon. Note: A light coating is better than a soak.
  9. Spoon the Greek yogurt into a small serving bowl to act as a side dip.
