Ingredients:
- 1 lb (450g) ground pork
- 1 small (100g) onion, very finely minced
- 2 cloves (6g) garlic, minced
- 1 tsp (2g) dried fennel seeds, slightly crushed
- 1 tsp (6g) kosher salt
- 1/2 tsp (1g) freshly cracked black pepper
- 1/4 cup (15g) plain breadcrumbs
- 1 tbsp (15ml) cold water
- 1 package (14 oz / 400g) chilled puff pastry
- 1 large (50g) egg, beaten
- 1 tsp (5g) sesame seeds
Instructions:
- In a large bowl, combine the ground pork, minced onion, garlic, fennel, salt, pepper, breadcrumbs, and cold water. Mix by hand until the meat becomes tacky and cohesive.
- Roll out the puff pastry into a rectangle on a flat surface.
- Divide the pork filling into 12 equal portions. Shape each portion into a log and place them lengthwise across the puff pastry.
- Carefully roll the pastry over the meat logs, sealing the seams with a small amount of beaten egg wash.
- Brush the tops of the rolls with the remaining egg wash and sprinkle with sesame seeds.
- Place rolls on a parchment-lined baking sheet and bake at 400°F (200°C) for 25-30 minutes until the pastry is mahogany-colored and shattering.
