Ingredients:

  • 1 cup (150g) fresh strawberries, hulled and quartered
  • 1 tbsp (20g) raw honey
  • 1 tsp fresh lemon juice
  • 1 pinch sea salt
  • 1 cup (225g) plain 2% Greek yogurt
  • 0.25 tsp vanilla bean paste or pure extract
  • 2 tbsp sliced almonds
  • 1 tsp chia seeds

Instructions:

  1. Place the sliced strawberries in a small bowl. Drizzle with honey, lemon juice, and a pinch of salt. Toss gently and let macerate for at least 5 minutes until a syrup forms.
  2. In a medium serving bowl, combine the Greek yogurt and vanilla. Use a whisk or sturdy fork to beat the yogurt vigorously for 30 seconds to incorporate air.
  3. Pour the macerated strawberries and all the accumulated honey-syrup directly over the aerated yogurt base.
  4. Sprinkle 1 tsp chia seeds over the fruit. Let them sit for 60 seconds to grab onto the syrup.
  5. Top with 2 tbsp sliced almonds for added texture and healthy fats. Try to keep them on top of the fruit so they don't get soggy from the yogurt moisture.
