Ingredients:
- 1 sheet (250g) frozen puff pastry, thawed
- 1 large egg (50g), beaten
- 8 oz (225g) cream cheese, softened to room temperature
- 1/4 cup (50g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 pinch salt
- 1 cup (150g) fresh strawberries, hulled and thinly sliced
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface and cut into 8 equal squares (approximately 3x3 inches).
- Using the back of a small spoon or your thumb, press a circle into the center of each square to create a well, leaving a 1/2 inch border.
- Brush the raised edges of the pastry with the beaten egg wash.
- In a mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and salt on medium speed until smooth and airy.
- Spoon 1 to 2 tablespoons of the cream cheese mixture into the center of each pastry well, ensuring it sits slightly below the rim.
- Place 2-3 thin strawberry slices on top of the cream cheese filling, overlapping them slightly.
- Bake for 12-15 minutes, or until the pastry edges have risen and turned a deep golden brown.
- Remove from the oven and allow to cool slightly before serving.
