Ingredients:
- 1 cup (240g) mashed sweet potato (cooked and cooled)
- 1 large (50g) egg, room temperature
- 1/2 cup (60g) all-purpose flour
- 1/4 cup (60ml) milk
- 2 tbsp (30ml) maple syrup
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (1.5g) salt
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30g) unsalted butter
Instructions:
- Whisk the mashed sweet potato, egg, maple syrup, and vanilla extract in a large bowl until the mixture is velvety and smooth.
- Sift the flour, baking powder, cinnamon, ginger, and salt directly into the wet ingredients.
- Fold the mixture with a spatula until just combined. Note: Stop as soon as the flour streaks vanish to keep them fluffy.
- Stir in the milk slowly until the batter is pourable but still thick.
- Heat your skillet over medium heat and melt the butter until it begins to sizzle.
- Pour 1/4 cup (60ml) of batter per pancake onto the hot surface.
- Cook for 2–3 minutes until small bubbles form on the surface and the edges look set.
- Flip the pancake carefully with a spatula.
- Cook for another 2 minutes until mahogany colored and the centers are no longer jiggly.
- Remove from the pan and let them rest for 1 minute before stacking.
