Ingredients:

  • 1 lb ground turkey (93% lean / 7% fat)
  • 2 tbsp ice-cold chicken bone broth or water
  • 1.5 tsp fine sea salt
  • 1 tsp rubbed sage
  • 0.5 tsp dried thyme
  • 0.5 tsp smoked paprika
  • 0.25 tsp ground nutmeg
  • 0.25 tsp red pepper flakes
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tbsp pure maple syrup
  • 0.5 tsp freshly cracked black pepper

Instructions:

  1. In a large, chilled bowl, combine the ground turkey with all the dry spices (salt, sage, thyme, paprika, nutmeg, pepper flakes, garlic powder, onion powder, black pepper), the maple syrup, and the cold broth.
  2. Use your hands or a sturdy spatula to mix until just combined and the meat looks slightly tacky. Do not overwork the meat to avoid a dense texture.
  3. Divide the mixture into 12 equal portions using a small cookie scoop for uniform sizing.
  4. Shape into 2-3 inch patties and place on parchment paper.
  5. Heat a cast iron skillet over medium-high heat. Sear patties until a mahogany-colored crust forms and the internal temperature reaches 165°F (74°C), approximately 4-5 minutes per side.
