Ingredients:

  • 1 medium (150g) red onion, thinly sliced into half-moons
  • 2 tbsp (8g) fresh Italian parsley, finely chopped
  • 1 tbsp (6g) ground sumac
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/2 tsp (3g) sea salt

Instructions:

  1. Slice the red onion as thinly as possible into translucent half-moons.
  2. Place the sliced onions in a colander and rinse under ice-cold running water for 30 seconds, then pat dry with a paper towel.
  3. In a mixing bowl, toss the onions with sumac, lemon juice, olive oil, and salt. Gently massage the seasonings into the onions for about 30 seconds until they turn vibrant pink.
  4. Fold in the chopped parsley just before serving.
