Ingredients:
- 1 medium (150g) red onion, thinly sliced into half-moons
- 2 tbsp (8g) fresh Italian parsley, finely chopped
- 1 tbsp (6g) ground sumac
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (15ml) extra virgin olive oil
- 1/2 tsp (3g) sea salt
Instructions:
- Slice the red onion as thinly as possible into translucent half-moons.
- Place the sliced onions in a colander and rinse under ice-cold running water for 30 seconds, then pat dry with a paper towel.
- In a mixing bowl, toss the onions with sumac, lemon juice, olive oil, and salt. Gently massage the seasonings into the onions for about 30 seconds until they turn vibrant pink.
- Fold in the chopped parsley just before serving.
