Ingredients:

  • 1.5 cups self-rising flour
  • 1 cup non-fat Greek yogurt
  • 2 cups warm water
  • 2 tablespoons baking soda
  • 1 tablespoon coarse sea salt

Instructions:

  1. In a large mixing bowl, combine the self-rising flour and non-fat Greek yogurt. Stir with a spatula until a shaggy dough ball forms.
  2. Turn the dough onto a lightly floured surface and knead for 2–3 minutes until the dough is smooth and no longer sticky.
  3. Divide the dough into four equal segments. Roll each segment into a long 'snake' approximately 1 inch thick, then use a bench scraper or knife to cut into 1-inch nuggets.
  4. Prepare the alkaline bath by whisking baking soda into the warm water. Submerge each dough nugget into the solution for 30 seconds, then remove with a slotted spoon.
  5. Place the bites on a baking sheet lined with parchment paper. Sprinkle with coarse sea salt.
  6. Bake in a preheated oven at 425°F (218°C) for 10–12 minutes, or air fry at 375°F for 7-8 minutes, until the crust is deep mahogany brown.
