Ingredients:
- 1 package (96 g) instant vanilla pudding mix
- 2 cups (480 ml) cold whole milk
- 1 can (397 g) sweetened condensed milk
- 2 tsp (10 ml) pure vanilla extract
- 2 cups (480 ml) heavy whipping cream, chilled
- 1/4 cup (30 g) powdered sugar
- 1 box vanilla wafer cookies (like Nilla Wafers)
- 4-5 ripe bananas, sliced
Instructions:
- Whisk together the instant vanilla pudding mix and cold whole milk in a large bowl for 2 minutes.
- Stir in the sweetened condensed milk and 1 tsp of vanilla extract until the mixture is smooth and glossy.
- Set the pudding aside for 5 minutes to allow it to set.
- In a separate chilled bowl, beat the heavy whipping cream, powdered sugar, and the remaining 1 tsp of vanilla extract on medium-high speed until stiff peaks form.
- Using a rubber spatula, gently fold the whipped cream into the pudding mixture using a 'cut and fold' motion—slicing through the center and lifting from the bottom—until no white streaks remain.
- Spread a thin layer of the cream mixture at the bottom of a 9x13 inch glass baking dish.
- Arrange a single layer of vanilla wafer cookies on top, followed by a layer of sliced bananas.
- Repeat the layering process of cream, wafers, and bananas until all ingredients are used, ending with a smooth layer of cream on top.
- Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours to allow cookies to soften.
