Ingredients:
- 2 cups (250g) all-purpose flour
- 1.5 tsp (7g) baking powder
- 0.5 tsp (3g) baking soda
- 0.5 tsp (3g) salt
- 1.75 cups (350g) granulated sugar
- 1 cup (235ml) vegetable oil
- 3 large eggs
- 1 tbsp (15ml) pure vanilla extract
- 2 cups (225g) grated zucchini
- 2 cups (240g) powdered sugar
- 3 tbsp (42g) unsalted butter, melted
- 2 tbsp (30ml) heavy cream
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch pan and line with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until no lumps remain.
- Grate the zucchini using the small holes of a grater to ensure fine shreds.
- In a large bowl, beat eggs and granulated sugar on medium-high until pale and slightly fluffy.
- Stream in the vegetable oil and vanilla extract while continuing to beat.
- Stir in the grated zucchini by hand using a spatula until evenly distributed.
- Slowly add the flour mixture to the wet ingredients. Stir until just combined; do not overmix.
- Spread the batter evenly into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan.
- Prepare the glaze by mixing powdered sugar, melted butter, heavy cream, and vanilla extract. Apply to the cooled cake.
