Ingredients:
- 1/2 cup (45g) oat flour
- 3 tbsp plant-based milk
- 1 tbsp maple syrup
- 1/2 tsp baking powder
- 1/4 tsp apple cider vinegar
- 1 pinch sea salt
- 1 tbsp (12g) coconut sugar
- 1/2 tsp ground cinnamon
- 1 tsp almond butter
- 1 tbsp coconut yogurt
- 1 tsp maple syrup
- 1 drop vanilla bean paste
Instructions:
- In a small mixing bowl, whisk together the oat flour, baking powder, and a pinch of sea salt.
- Add 3 tablespoons of plant-based milk, 1 tablespoon of maple syrup, and the apple cider vinegar. Stir until a soft, slightly tacky dough forms. If too sticky, add one extra teaspoon of oat flour.
- Place the dough on a piece of parchment paper and pat it into a long, thin rectangle.
- Spread 1 teaspoon of almond butter over the dough, then sprinkle evenly with the coconut sugar and ground cinnamon.
- Carefully roll the dough into a spiral log and place it into a wide-mouth microwave-safe mug.
- Microwave on high for 90 seconds. For a softer texture, add a teaspoon of water to the bottom of the mug or cover loosely to create steam.
- Whisk the coconut yogurt, remaining teaspoon of maple syrup, and vanilla bean paste together. Drizzle over the warm cinnamon roll before serving.
