Ingredients:

  • 1/2 cup (45g) oat flour
  • 3 tbsp plant-based milk
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/4 tsp apple cider vinegar
  • 1 pinch sea salt
  • 1 tbsp (12g) coconut sugar
  • 1/2 tsp ground cinnamon
  • 1 tsp almond butter
  • 1 tbsp coconut yogurt
  • 1 tsp maple syrup
  • 1 drop vanilla bean paste

Instructions:

  1. In a small mixing bowl, whisk together the oat flour, baking powder, and a pinch of sea salt.
  2. Add 3 tablespoons of plant-based milk, 1 tablespoon of maple syrup, and the apple cider vinegar. Stir until a soft, slightly tacky dough forms. If too sticky, add one extra teaspoon of oat flour.
  3. Place the dough on a piece of parchment paper and pat it into a long, thin rectangle.
  4. Spread 1 teaspoon of almond butter over the dough, then sprinkle evenly with the coconut sugar and ground cinnamon.
  5. Carefully roll the dough into a spiral log and place it into a wide-mouth microwave-safe mug.
  6. Microwave on high for 90 seconds. For a softer texture, add a teaspoon of water to the bottom of the mug or cover loosely to create steam.
  7. Whisk the coconut yogurt, remaining teaspoon of maple syrup, and vanilla bean paste together. Drizzle over the warm cinnamon roll before serving.
