Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups finely grated zucchini

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease your 9x13 pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt until no clumps remain.
  3. In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until the mixture is pale and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gently fold in the dry ingredients using a spatula, followed by the grated zucchini. Mix only until the flour streaks disappear.
  6. Spread the batter evenly into the prepared pan using a spatula.
  7. Bake for 22–27 minutes until the edges are golden and the center is set.
