Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups finely grated zucchini
Instructions:
- Preheat your oven to 350°F (175°C) and grease your 9x13 pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt until no clumps remain.
- In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until the mixture is pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gently fold in the dry ingredients using a spatula, followed by the grated zucchini. Mix only until the flour streaks disappear.
- Spread the batter evenly into the prepared pan using a spatula.
- Bake for 22–27 minutes until the edges are golden and the center is set.
