Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- ½ cup (115g) unsalted butter, melted and cooled
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (225g) shredded zucchini, pressed dry
Instructions:
- Grate the zucchini using the fine side of a box grater. Place the shreds in a clean kitchen towel or paper towels and squeeze firmly to remove excess water.
- Whisk the flour, baking soda, baking powder, salt, and cinnamon in a medium bowl.
- In a separate large bowl, beat the melted butter and sugar until smooth.
- Stir in the eggs and vanilla, then fold in the pressed zucchini until evenly distributed.
- Gently fold the dry ingredients into the wet mixture using a spatula. Stop the moment no streaks of flour remain.
- Fold in optional nuts or chocolate chips if using.
- Preheat oven to 350°F (175°C). Grease mini loaf pans or line them with parchment.
- Fill each cavity 2/3 full to allow for rise.
- Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean and the tops are a deep mahogany brown.
