Ingredients:
- 1.5 cups (225g) finely grated zucchini
- 0.5 cup (120ml) neutral oil
- 0.75 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 0.5 tsp (2g) baking powder
- 0.5 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a strip of parchment paper across the bottom for a clean release. Grate your zucchini using the fine side of the grater to ensure it melts into the batter.
- In a medium bowl, whisk together the oil, sugar, eggs, and vanilla until the mixture looks pale and slightly frothy. In a separate large bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
- Pour the wet ingredients into the dry blend. Using a rubber spatula, fold gently until just combined—stop as soon as you see no more streaks of flour. Fold in the grated zucchini and chocolate chips.
- Pour the batter into the prepared pan. Bake for 50-60 minutes until a toothpick inserted into the center comes out with a few moist crumbs. Let it cool in the pan for 10 minutes before transferring to a wire rack.
