Ingredients:

  • 1.5 cups (225g) finely grated zucchini
  • 0.5 cup (120ml) neutral oil
  • 0.75 cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 0.5 tsp (2g) baking powder
  • 0.5 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a strip of parchment paper across the bottom for a clean release. Grate your zucchini using the fine side of the grater to ensure it melts into the batter.
  2. In a medium bowl, whisk together the oil, sugar, eggs, and vanilla until the mixture looks pale and slightly frothy. In a separate large bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
  3. Pour the wet ingredients into the dry blend. Using a rubber spatula, fold gently until just combined—stop as soon as you see no more streaks of flour. Fold in the grated zucchini and chocolate chips.
  4. Pour the batter into the prepared pan. Bake for 50-60 minutes until a toothpick inserted into the center comes out with a few moist crumbs. Let it cool in the pan for 10 minutes before transferring to a wire rack.
