Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) baking powder
- 1 tbsp (6g) ground ginger
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground cloves
- 1/4 tsp (1g) salt
- 2 cups (220g) grated zucchini
- 3/4 cup (150g) packed brown sugar
- 1/2 cup (160ml) unsweetened applesauce
- 1/2 cup (160ml) molasses
- 2 large eggs
- 1 tsp (5ml) vanilla extract
Instructions:
- Grate the zucchini using the fine side of a box grater. Place the shreds in a clean kitchen towel or paper towels and gently squeeze to remove excess water.
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking soda, baking powder, ground ginger, cinnamon, cloves, and salt.
- In a second bowl, beat the eggs, brown sugar, molasses, and unsweetened applesauce until smooth. Stir in the vanilla extract and the prepared zucchini.
- Gently fold the dry ingredients into the wet mixture using a spatula, stirring only until no more streaks of flour are visible.
- Pour the batter into a greased and parchment-lined 9x5 inch loaf pan.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
