Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 2 tsp (10g) ground cinnamon
- 1 tsp (5g) ground nutmeg
- 1/2 tsp (2g) ground cloves
- 3/4 cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed brown sugar
- 3 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (230g) grated zucchini, squeezed dry
- 1/2 cup (120ml) sour cream
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- 1 pinch (1g) salt
- 1 tbsp (15ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until the color is uniform.
- In a large bowl, beat the softened butter with granulated and brown sugars until the mixture is pale and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until smooth.
- Gently fold the squeezed-dry grated zucchini into the wet mixture using a rubber spatula.
- Gradually add the dry ingredients to the wet, stirring just until no streaks of flour remain. Do not overmix.
- Pour the batter into the prepared pan, smooth the top, and bake for 30–35 minutes until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack before frosting.
- Beat the softened cream cheese and butter together until velvety.
- Gradually add powdered sugar, salt, vanilla extract, and heavy cream, beating until smooth and fluffy.
- Spread the frosting evenly over the cooled cake.
