Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (2g) salt
- 1 tbsp (6g) ground cinnamon
- 1 cup (200g) granulated white sugar
- 1 cup (200g) packed light brown sugar
- 3/4 cup (170ml) neutral vegetable oil
- 3 large (150g) eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- 3 cups (350g) grated zucchini, lightly squeezed
- 1 cup (115g) chopped walnuts, toasted
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) heavy cream
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, beat the white sugar, brown sugar, vegetable oil, eggs, and vanilla using a hand mixer until the mixture is smooth and pale.
- In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually stir the dry mixture into the wet ingredients using a spatula, stopping as soon as no streaks of flour remain.
- Gently fold in the grated zucchini and toasted walnuts until evenly distributed.
- Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 35 minutes, or until the edges pull away slightly and a toothpick inserted in the center comes out with a few moist crumbs.
- Let the cake cool completely on a wire rack before frosting.
- Beat the softened cream cheese and butter together until smooth, then mix in the powdered sugar, vanilla extract, and heavy cream until velvet in consistency.
