Ingredients:
- 1.5 cups (190g) All-purpose flour
- 0.75 cup (150g) Coconut sugar
- 0.5 cup (120ml) Unsweetened pumpkin purée
- 0.25 cup (60ml) Plain Greek yogurt
- 0.25 cup (60ml) Light olive oil
- 1 large Egg (approx. 50g)
- 1 tsp (5ml) Vanilla extract
- 1 tsp (5g) Baking soda
- 1 tbsp (6g) Pumpkin pie spice
- 0.5 tsp (3g) Salt
- 8 oz (225g) Low-fat cream cheese, softened
- 0.25 cup (55g) Unsalted butter, softened
- 1.5 cups (180g) Powdered sugar
- 1 tsp (5ml) Vanilla extract
- 1 tsp (5ml) Lemon juice
Instructions:
- In a medium bowl, sift together the all-purpose flour, baking soda, pumpkin pie spice, and salt.
- In a large bowl, beat the egg and coconut sugar until pale. Stir in the pumpkin purée, Greek yogurt, light olive oil, and vanilla extract until the mixture is smooth and glossy.
- Gently fold the dry ingredients into the wet ingredients, stirring just until combined to avoid over-mixing.
- Using a 2-tablespoon cookie scoop, portion the batter onto a parchment-lined baking sheet.
- Bake for approximately 12 minutes or until the cakes are set and spring back when touched. Allow them to cool completely.
- Using an electric hand mixer, whip together the softened low-fat cream cheese and unsalted butter until smooth.
- Gradually beat in the powdered sugar, vanilla extract, and lemon juice until the filling is light and fluffy.
- Pipe or spoon a generous amount of filling onto the flat side of one cooled cake and sandwich with another cake.
