Ingredients:
- 1 sheet (17.3 oz / 490g) frozen puff pastry
- 1 large (50g) egg
- 1 tbsp (8g) granulated sugar
- 4 oz (115g) low-fat cream cheese
- 4 oz (115g) mascarpone cheese
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 tsp (2g) lemon zest
- 2 cups (300g) mixed fresh berries
- 1 tbsp (15ml) apricot preserves
- 1 tbsp (15ml) water
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet slightly on the parchment and lightly score a 1-inch border around the edge without cutting all the way through.
- Brush the scored border with beaten egg wash and sprinkle with granulated sugar.
- Bake for 12–15 minutes until the pastry is mahogany-colored and risen around the edges, then let cool completely.
- Beat softened low-fat cream cheese until smooth.
- Add chilled mascarpone, maple syrup, vanilla, and lemon zest; whip on medium-high speed for 2 minutes until airy with soft peaks.
- Spread the cream filling evenly within the baked pastry border.
- Arrange mixed fresh berries on top of the cream filling in a mosaic pattern.
- Heat apricot preserves and water in a small saucepan until melted, then brush the glaze over the berries.
